Founded in 1885, this long-established brewery has a history of over 130 years in the Ushinosakai district of Tarumi City, overlooking Kinko Bay and Sakurajima.
When talking about Moriizo Sake Brewery, one thing that cannot be left out is their ironclad rule of "not increasing production volume." While many breweries have shifted to mass production using stainless steel tanks, this brewery has stubbornly continued to use the "earthenware jar brewing" method that they have used since their founding. There are only about 50 earthenware jars in the brewery. No matter how popular the brewery becomes, they will not increase production, as increasing the number of jars would mean that they would not be able to keep an eye on the brewery and the taste would deteriorate.
The highest quality sweet potatoes (Kogane Senkan) grown by contracted farmers, the pure spring water of the Takakuma mountain range, and the soulful handiwork of the brewers. The single drop born from this trinity is said to have captivated even a former French president, and continues to reign as the pinnacle of shochu enthusiasts' dreams.
